Savory Herbed Tofu Scramble

Mornings in the city demand clarity. Not rush — clarity. Something warm, grounding, and steady enough to carry you into whatever the day requires.

This Savory Herbed Tofu Scramble is my answer to mornings when I need fuel without heaviness. It’s comforting, protein-forward, and layered with flavor — the kind of breakfast that feels intentional instead of accidental.

Ingredients

• 1 block extra-firm tofu, drained and crumbled

• 1 tbsp olive oil

• ½ small onion, finely diced

• 1 clove garlic, minced

• ½ tsp turmeric

• ½ tsp smoked paprika

• ¼ tsp black pepper

• Salt to taste

• 1 tbsp nutritional yeast

• 1 tbsp fresh parsley or chives, chopped

• Optional: sautéed spinach or mushrooms

Instructions

1. Heat olive oil in a skillet over medium heat.

2. Add onion and sauté until soft and translucent.

3. Add garlic and cook for 30 seconds until fragrant.

4. Add crumbled tofu, turmeric, smoked paprika, pepper, and salt.

5. Cook for 5–7 minutes, stirring gently, allowing moisture to cook off.

6. Stir in nutritional yeast and optional vegetables.

7. Finish with fresh herbs and serve warm.
