Breakfast – Spiced Pumpkin Quinoa Porridge

Ingredients

• 1 cup quinoa, rinsed

• 2 cups almond or oat milk

• ½ cup pumpkin puree

• 1 tsp cinnamon

• ½ tsp nutmeg

• ¼ tsp ground ginger

• 2 tbsp maple syrup

• Pinch of salt

• Optional: toasted pumpkin seeds or pecans

Instructions

1. In a pot, combine quinoa and milk. Bring to a gentle simmer.
