Tomato-Braised Chickpeas & Spinach Stew

Ingredients

• 1 tbsp olive oil

• 1 small onion, diced

• 2 cloves garlic, minced

• 1 tsp smoked paprika

• 1 can crushed tomatoes

• 1 can chickpeas, drained

• 3 cups fresh spinach

• Salt and pepper to taste

Instructions

1. Heat olive oil in a pot over medium heat.

2. Sauté onion until soft, then add garlic and paprika.

3. Pour in tomatoes and chickpeas; simmer for 10–15 minutes.

4. Stir in spinach until just wilted.

5. Season and serve warm.
