Dinner – Miso-Glazed Eggplant & Lentil Stew

By evening, the city asks you to slow, to savor. Dinner is no longer about speed or convenience; it’s about ritual, nourishment, and warmth. This miso-glazed eggplant and lentil stew fills the kitchen with aroma and your body with calm.

Ingredients

• 1 large eggplant, cut into cubes

• 1 cup cooked green or brown lentils

• 1 tbsp sesame oil

• 1 small onion, chopped

• 2 cloves garlic, minced

• 1 tbsp miso paste

• 2 cups vegetable broth

• 1 tsp smoked paprika

• Salt and pepper to taste

• Fresh cilantro for garnish

Instructions

1. Heat sesame oil in a large pot over medium heat. Add onions and garlic; sauté until soft.

2. Stir in eggplant cubes, cooking until slightly caramelized.

3. Mix miso paste with vegetable broth, then pour into the pot.

4. Add lentils, smoked paprika, salt, and pepper. Simmer for 15–20 minutes until flavors meld and eggplant is tender.

5. Garnish with fresh cilantro and serve warm.
